This is our Citron pickle. The only other citrus pickle other than Shatkora Supreme. The taste is savory with an undertone of bitterness that you expect from lemon pickle. We also made it quite spicy to complement the sour notes and the bitterness.

This variety of citrus fruit is found in the Sylhet region. Each of these magnificent fruits weighs around a kilo or so. The rind is very thick and it is what you use from this fruit. And it is not very bitter. When turned into pickle, the fleshy part of the skin becomes smooth and buttery.

At Fusion Terminal, we slow-age the rind until it softens to a creamy, buttery melt, and then blend it with mustard oil, chili powder, fenugreek, hing, and turmeric. The result?
