This is the FT version of the classic shatkora pickle. If you like the delicious bitterness of a citrus pickle, you will love it!

The scientific name of Shatkora is Citrus macroptera. The fruit is usually about 6–7 cm in diameter, has a fairly smooth, moderately thick rind, and is yellow when ripe. The pulp of the fruit is greenish yellow and on the dry side. The juice is very bitter, and somewhat sour. This is our version of the classic! These seductive citrus fruits are mixed and marinated in a blend of aromatic spices and soaked in select grade mustard oil. While a complex selection of spices are used, we carefully let the flavor and taste of Shatkora shine through.

At Fusion Terminal, we age our select-grade shatkora slices in mustard oil (shorsher tel) with a deeply aromatic mix of garlic, coriander, fenugreek, turmeric, and mustard powder. But the real star? The shatkora itself. We keep the spice blend gentle so its natural bitterness, creamy texture, and slow-melting mouthfeel take center stage.
